- Japanese A5 is a special-order line here, not a standing one. The shop's own Wagyu page says it brings Wagyu in "for special occasions and holidays" and asks customers to "Give us a call before the holidays to see what wagyu we will have in stock." Phone ahead on 860-676-4444 rather than making the trip on spec.
- The Wagyu is described only by its A5 grade. No prefecture, brand or farm is named for it, which is a notable gap at a shop that otherwise advertises that most of its meat is traceable to the farm of origin.
- Wagyu does not appear in the online ordering system, which is built for local grocery orders, sandwiches, catering and pickup. Buying A5 here means dealing with the counter in person or by phone.

Japanese A5 Wagyu is part of the range but arrives seasonally rather than sitting in the case: the shop most often carries A5 ribeye, with strip and tenderloin also appearing, and cuts it thin, around half an inch, for hot fast searing.
