Japanese beef down to prefecture, brand, and grade; American Wagyu by breed status and the ranch behind it; Australian by producer and marbling score. When a venue's claim goes no deeper than its menu, we publish it as a menu claim only, never dressed up as verified.
Japanese
Prefecture + brand + Japanese carcass grade (A5 to A3). Miyazaki, Kagoshima, Omi, and Kobe, each with its own production rules.
American
Breed status (fullblood, purebred, F1) and the named ranch behind it. Akaushi/HeartBrand where certified.
Australian
The producer and its marbling score on a named scale (MB 6 to 9+), not a bare “Wagyu” label.
