Eating Wagyu in Houston, Texas

Houston is the best place on this site to see what a Kobe licence does and does not mean. Forty-five of its restaurants publish here and sixteen clear the full sourcing standard. Seven of those sixteen hold a licence on the official Kobe Beef Association registry and only four carry the Certified Kobe badge. No city covered has a wider gap between the two.

That gap is the whole lesson. A registry licence is permission to buy genuine Kobe, granted to the restaurant. The badge here requires that permission and Kobe actually appearing on the menu we verified, because the two are different facts and only the second one gets eaten. Three licensed rooms in this city were serving other prefectures when we last read them, which is completely legitimate: Kobe is scarce, expensive and often seasonal, and a licence holder may go months without it. Anywhere that treats the licence alone as proof will tell you Houston has seven Kobe restaurants. It has four, today, and that number moves.

The other half of the city's character is Texas, and it is Akaushi. Three verified rooms carry a Certified Akaushi badge for the Red Wagyu strain, and all three name HeartBrand of Harwood, about two hours west. They are not the rooms you would guess: a steakhouse, a neighbourhood cafe group, and a health-casual kitchen that prints the producer in the description of its meatballs.

R-C Ranch, south of the city, is the instructive counter-case. Six published venues name it and none can be badged for it: the ranch owns a registered fullblood sire, but the beef sold under its own label runs from three-quarters Wagyu upward, so the menu tells you who raised the animal and not what it was. That is the ordinary case for American Wagyu, and why many honest menus stop short of the badge.

Formats are unusually varied for a steakhouse city: two rooms serve it on hot stone, two run an omakase, and there is a salt block, a butcher counter, a tasting flight, yakiniku and shabu-shabu among the sixteen. The other twenty-nine published venues advertise Wagyu without documenting where it came from, and are listed separately below.
