Where it comes from
The Wagyu flight borrows the idea of a wine or whiskey flight: several examples side by side to compare. Steakhouses adopted it so guests could taste across grades and origins in a single order.
How it works
You receive a small tasting of several Wagyu together, plated for direct comparison, such as different Japanese prefectures or Japanese A5 alongside American Wagyu and USDA Prime. Portions are deliberately small so you can taste all of them.
What to look for
A flight can make differences easier to compare when each cut names its origin, grade, producer, and preparation. Without that disclosure, the format itself does not establish what differs.
