Chicago names the farm. Seventy-five of its restaurants publish here and seventeen clear the full sourcing standard, and what distinguishes them is how far past the prefecture their menus go. Most American menus that document anything document a prefecture, which narrows the beef to a region roughly the size of a small county. Several rooms here name the individual producer inside it: one verified steakhouse lists six by name across Japan, Australia and Texas on a single menu.

That granularity matters because a prefecture is a place and a farm is a decision. Two producers in the same prefecture, feeding different rations for different lengths of time, deliver noticeably different beef, and a menu naming the farm is telling you which one you are getting. It is also the hardest kind of claim to fake, since the farm can be looked up.

This is the most decorated Wagyu list in the country by one measure: six of the seventeen carry a MICHELIN distinction, one of them a Bib Gourmand, which is more than any other city covered here. It is not, though, a Kobe city. Five of the seventeen hold a licence on the official Kobe Beef Association registry and three carry the Certified Kobe badge, which needs the licence and Kobe on the menu we verified, and one holds the licence without it. Against ten of seventeen in Las Vegas, Kobe here is a three-room proposition.

Three of the seventeen sit below the top price tier, including the Bib Gourmand, so a verified Wagyu meal in this city does not have to start in three figures. The fifty-eight remaining published venues advertise Wagyu on a current menu without showing its origin, and are listed separately below for that reason. Several of them come close. One West Loop steakhouse names four different sources on one list, Kagoshima and a Japanese brand alongside an Australian producer and a domestic ranch, and prints a grade for none of them; another credits a different supplier on each of its three Wagyu steaks. Naming the source is most of the way there, and the grade is the part that finishes it.
