Wagyu restaurants in Illinois

Ninety-five Illinois restaurants publish here and nineteen clear the full sourcing standard, with seventy-six resting on a menu claim. Seventeen of the nineteen verified rooms are in Chicago, with the other two out at Waukegan near the Wisconsin line and in Oak Brook. That concentration is extreme without being unique: Nevada and New York hold their verified lists almost as tightly to one city, and the three states sit within a point of each other.

Chicago also carries more MICHELIN-recognized Wagyu rooms than any other state. Six of the seventeen hold a distinction, one of them a Bib Gourmand at a Korean barbecue room, against five in Texas and four each in California and Florida, all of which have far larger verified lists to draw from.

The local habit is naming the individual farm rather than the region, which is rarer than it sounds. Most American menus that document anything document a prefecture, narrowing the beef to an area the size of a small county. Two Chicago steakhouses go further: one lists Kaneko Farm and Takamori, the other Usunaga Farm and Horisaka Ranch.

Kobe is the weak spot. Six Illinois rooms hold a registry licence and three were serving Kobe when we last looked, a conversion of fifty percent that is the lowest of any state holding three or more licences. In Illinois more than elsewhere, the licence is worth checking against the current menu before booking on the strength of the word.
