Denver advertises far more Wagyu than it documents. Twenty-six of its restaurants publish here and three clear the full sourcing standard, so twenty-three advertise it on a current menu without showing where it came from, more than seven times as many as document it. That gap is what makes the three worth reading closely.

Zero of the three hold a licence on the official Kobe Beef Association registry, so each reaches the standard by naming its sources instead. One carries a MICHELIN distinction, a selection rather than a star.

The densest sourcing here belongs to a contemporary steakhouse that names a Kentucky farm finishing its cattle for five hundred days, a Texas ranch, and an Australian brand on one menu, all three of which are listed on this site in their own right. It also serves ichibo, a rump cut almost no American steakhouse carries. The second is a Japanese izakaya sitting below the top price tier, which is the cheapest documented Wagyu in the city.

The third has the shortest supply line of the three and is the newest. A steakhouse at the Ritz-Carlton names 7X Beef on its lounge menu, a fullblood herd at Hotchkiss on Colorado's Western Slope that is listed on this site in its own right, so that beef travels a few hundred miles rather than across an ocean. Fullblood means the entire pedigree traces to Japan with no crossbreeding, which is the strongest breed claim an American producer can make and one only eighteen rooms in this whole directory carry.

The pattern across those three is that Denver's documented Wagyu is a steakhouse proposition with one Japanese exception, and that the useful question here is not which room but whether a given menu names anything at all.
