A LoHi izakaya at 1560 Boulder Street running one of Denver's broader Wagyu programmes on its own online ordering menu. The $45 A5 Wagyu Ramen is built on A5 Miyazaki Wagyu, naming both the Japanese prefecture and the grade on the dish itself, and it is joined by an A5 Wagyu Bone Marrow at $26, seared A5 Wagyu beef at $22 and a lobster tempura roll topped with seared A5 Wagyu at $45. Wagyu bibimbap, short ribs and a brisket ramen round out the list without stating an origin. Three further dishes are sold as Kobe Beef: buns at $16, a roll at $18 and a banh mi at $20. The restaurant does not hold a licence from the official Kobe Beef association, so those three are not certified Kobe whatever else they may be. Order the Miyazaki ramen if Japanese provenance is what you came for.

Authenticity flags

  • Three dishes here are sold as Kobe Beef: the buns at $16, the roll at $18 and the banh mi at $20. This restaurant is not licensed by the official Kobe Beef association in Japan, and all three are priced below the kitchen's own A5 Wagyu plates, which is not how genuine Kobe is sold. Treat them as Wagyu of undisclosed origin rather than certified Kobe. The A5 Miyazaki ramen is the dish with the provenance actually stated on it.
