Wagyu restaurants in Colorado

Sixty-two Colorado restaurants publish here and ten clear the full sourcing standard, with fifty-two resting on a menu claim. Colorado kitchens put the word on a menu about five times as often as they say where the beef came from, which is close to the middle of the states with enough documented rooms to compare.

Where the documented rooms are has changed, and it is no longer mainly a ski-town story. Boulder now holds four, more than any other city in the state and more than Denver, which holds three out of twenty-six published. Vail still does well at two of its three. Aspen publishes four listings and Telluride two, and not one of those six has been verified.

Where Colorado does document, it leans domestic and often local, and the state has an unusual concentration of the strongest American breed claim there is. Three Colorado rooms carry a fullblood American Wagyu badge out of eighteen in the whole directory, and all three name the same ranch: 7X Beef of Hotchkiss, on the Western Slope, cited by a Vail dining room, a Boulder kitchen and a Denver steakhouse. That is about as short as a supply line gets anywhere in this directory. The other citations run to Durham Ranch, Strube Ranch and Black Hawk Farms rather than to Japanese prefectures, and one room holds a MICHELIN distinction, a selection rather than a star.

Colorado Springs is the instructive near-miss and worth a sentence, because it shows where the line sits. Two rooms at The Broadmoor name their ranch on their own pages, an operation in northern Colorado raising a herd exclusively for the resort, and the resort describes that herd as 98 percent full blooded. The ranch itself publishes nothing at all, so the breeding cannot be checked with the people who do the breeding, and neither room carries a breed badge. Naming a producer is most of the way there; it is not all of it.

Kobe does not appear in the state at all. Zero Colorado rooms hold a registry licence and zero carry the Certified Kobe badge, and not one of the ten reaches the certified tier, so Colorado is a state to read producer by producer rather than by badge, and the producers are mostly ones you can drive to.
