Wagyu restaurants in Vail, Colorado

Both of Vail's verified Wagyu rooms name a specific ranch, and one of them serves fullblood American Wagyu from within Colorado. Three of its restaurants publish here and two clear the full sourcing standard, and zero hold a licence on the official Kobe Beef Association registry.

The fullblood claim is the rare one. Fullblood means the entire pedigree traces to Japan, with no crossbreeding anywhere, and it is the strongest breed claim an American producer can make. Nearly all American Wagyu is F1, a straight half. Eighteen verified restaurants in this directory carry a fullblood badge, about one in twenty-two, and this one names the ranch behind it, at Hotchkiss on Colorado's western slope, which is listed on this site in its own right. Three of those eighteen are in Colorado and all three name that same ranch.

That room serves it on a salt block, which is an unusual choice and a sensible one for beef this rich: the salt seasons the meat as it cooks and the diner controls the timing, which matters because a few seconds too long renders the marbling out.

The second is a Japanese restaurant naming a Texas ranch, also listed here, and serving on hot stone and by the ounce. So a resort town of about five thousand people has two verified rooms, both naming a farm you can look up, which is a better ratio than most cities twenty times its size manage. The one remaining published venue advertises Wagyu without documenting its origin.
