Sushi Den is an open, long-running Old South Pearl sushi institution in Denver. Its own online ordering menu lists two Wagyu items: a Wagyu Beef Kushiyaki (skewers with shimeji mushrooms, truffle mashed potatoes and a port wine reduction, $25.50) and a Wagyu Beef Roll (five-piece, $17). Both are described simply as wagyu beef with no stated origin, grade, prefecture or producer, so they publish as real offerings without an authenticity badge. No Kobe or A5 claim appears anywhere on the beef; the many Japanese place names on the menu belong to fish, not the wagyu.
