Wagyu restaurants in West Hollywood, California

Two of West Hollywood's three published Wagyu restaurants are verified, and between those two rooms they offer five different ways to eat it. Three publish here, two clear the full sourcing standard, and one sits in the menu-only tail.

One is a steakhouse running an omakase, a tasting flight and by-the-ounce service off one verified menu, with an Australian producer named. Three formats in one room is rare anywhere, and the flight is the one to take if you have not eaten much of this beef, because tasting the origins beside each other answers in a sitting what a dozen menus cannot.

The other holds a licence on the official Kobe Beef Association registry and had Kobe on the menu we verified, so it carries the Certified Kobe badge, and serves it on hot stone in a Japanese-Brazilian-Peruvian dining room. Kobe reaching a kitchen that far outside the steakhouse and Japanese traditions is unusual, and hot stone is a sensible way to serve it: the diner controls the cooking, which matters enormously with beef this marbled, since a few seconds too long renders the fat out of it.
