Wagyu restaurants in California

Two hundred and ten California restaurants publish here and fifty-four clear the full sourcing standard, with one hundred and fifty-six more resting on a menu claim we could read but not confirm. What sets the state apart is not the count, it is the spread. Ten California cities clear the two-verified threshold, more than any other state, and none of them dominates: San Francisco leads with six verified rooms, about one in nine, where Dallas holds nearly a third of Texas. San Diego matches San Francisco, Los Angeles is close behind, and then Beverly Hills, Irvine, Santa Monica and Newport Beach each carry three.

It also names the producer on more menus than any other state. Twenty-four of its verified rooms carry the Sourcing Transparent badge, meaning the kitchen says where the beef came from rather than only what grade it is, and that is more than Texas and Florida managed between them at ten and four. As a rate it is forty-five percent, which is high for a state this size without being the national best: Nevada names a source in eighteen of nineteen verified rooms.

The cooking is less uniform too. Steakhouses are still the largest group but they are under half, and eleven verified rooms are Japanese, with omakase counters, yakiniku grills and shabu service all represented. The ribeye is the cut named most often here, ahead of the striploin, and the misuji shows up more than it does anywhere else in the top three.

Fourteen California rooms carry the Certified Kobe badge, the most of any state, out of twenty holding a registry licence. Four verified rooms also hold a MICHELIN distinction, one of them a star.
