Santa Monica is very nearly all verified. Four publish here, three clear the full sourcing standard, and one sits in the menu-only tail, so the second list on this page is a single room rather than the long tail most hubs carry.

That is a small claim honestly made. It does not mean Santa Monica has a lot of Wagyu, and this is one hub in a region deliberately split across several on this site: Los Angeles proper, Beverly Hills, West Hollywood, Irvine and Newport Beach each carry their own. It means the three rooms here that serve it say where it came from.

Two are steakhouses and both sell by the ounce, one of them alongside a tasting flight, and one names an Australian producer by brand rather than by country. Selling by the ounce is the format that decides whether a graded Japanese cut is orderable at all: a three or four ounce portion turns a three-figure price per pound into one course among several, and a room that only sells it as a full steak is effectively a room most people will not try it in.

The third is a sushi restaurant running an omakase, where the Wagyu arrives as one course in a sequence. Zabuton, the shoulder cut, appears on one of the steakhouse menus, which is a sign of a kitchen buying whole primals rather than portioned steaks. Zero of the three hold a licence on the official Kobe Beef Association registry, so all three reach the standard on documented sourcing.
