A Kilcoy brand, met in the US as Carrara 640

Carrara is the Wagyu brand of Kilcoy Global Foods, an Australian processor. US menus and retail listings commonly print it as Carrara 640, and that is the form this directory records because it is the form diners encounter.

Kilcoy's own brand page documents the Carrara Wagyu programme without explaining what the 640 designation denotes. We have not found a first-party source defining it, so this page does not assert a meaning for the number. Where a brand's own materials are silent, the honest entry is a shorter one.

Wagyu over Angus, 350 days on feed

Kilcoy describes the cattle as direct descendants of Japanese Wagyu Herdbook livestock and specifies the programme as a Wagyu and Angus cross, raised without hormone growth promotants. Animals are fed a proprietary marbling ration for a minimum of 350 days.

The programme also states DNA parent verification for animals registered with the Australian Wagyu Association Herdbook. That is a stronger authenticity artifact than most crossbred brands publish, because it ties an individual animal to a registered pedigree rather than asserting a breed at the brand level.

A 350-day minimum is a long feeding period by American standards and a moderate one by Japanese, where 600 days and beyond is common. It is the single most useful number on this page for setting an expectation, because days on feed drives marbling development more directly than breed percentage alone.

Reading the marble score tiers

Carrara is sold in marble score bands rather than as one product: MB 3, 4-5, 6-7, 8-9 and 9+. A cut sold at the bottom of that range and one sold at the top are meaningfully different products at meaningfully different prices, under one brand name.

So the brand name alone does not fix what you are buying. Ask for the band. This is the AUS-MEAT scale, not the Japanese one, and it does not convert into an A5 grade.
