Bushugyu Wagyu

Bushugyu takes its name from Bushu, one of the old names for the province covering present-day Saitama and historically associated with the samurai, which is why it is marketed in the United States as Samurai Beef. The cattle are Japanese Black, introduced to the program in 2001, and the name was registered as a trademark in 2003.

In Japan it is an association brand rather than one farm. The Saitama Bushu Wagyu Association certifies participating producers in northern Saitama. Current member and herd counts should be checked against a dated association source.

Many U.S. listings attribute Bushugyu to the Hasegawa family farm. That can identify the producer for a particular import program without defining the entire brand: Bushugyu is an association standard covering multiple producers, so confirm the farm for the exact product.

The distinction matters when reading a label. Hasegawa is useful producer information when it is tied to the exact product. But Bushugyu itself is a prefectural association standard, so a Bushugyu claim without the Hasegawa name is not automatically wrong, and Hasegawa is not a synonym for the brand.

Look for the Bushugyu, Bushu or Samurai Beef name together with the Saitama origin and a Japanese grade. In the US, the Hasegawa attribution is the additional detail that tells you which member farm the beef actually came from. For the prefecture's other brands, see our Saitama page.
