Las Vegas is the densest Wagyu market in the United States, and it is dense in an unusual way. Twenty-eight of its restaurants publish here and sixteen of them clear the full sourcing standard, a verification rate roughly twice the national one. The reason is structural rather than culinary: most of these rooms sit inside casino resorts, which publish detailed printed menus, keep them online, and name prefectures and grades because the beef is the reason the dish costs what it does.

Ten of those sixteen verified rooms hold a licence on the official Kobe Beef Association registry. That is close to one in ten of every registered venue in the country inside a single city, and it is worth being precise about what it means: a registry licence permits a restaurant to buy genuine Kobe, and it is only half of what earns a Certified Kobe badge here. The other half is Kobe actually appearing on the menu we verified. Nine of the ten clear both limbs; the remaining one holds the licence and was serving other prefectures when we last read it.

Expect to pay by the ounce. Ten of the sixteen sell it that way, usually with a three or four ounce minimum, which is how a three-figure price per pound becomes a course you can order alongside a normal steak. Every verified venue on this page prices in the top tier, so the useful question is not which is expensive but which format you want: a tasting flight across prefectures, a single graded cut by weight, or a counter where the chef portions it in front of you.
