The promotion council requires Japanese Black cattle meeting its production rules to grade A5 or B5; qualifying Miyagi cattle below that threshold are not sold under the Sendai Beef label. Miyagi public materials describe it as Japan's only beef brand restricted to quality grade 5.
The cattle are Japanese Black, born and raised in Miyagi and finished over roughly three years. Because the bar is set at the very top of the quality scale, the Sendai name is associated with the highest marbling rather than with volume.
