Authenticity flags
- The Morimoto Farm Kobe listing names the farm but carries no Hyogo or Tajima wording and does not say what paperwork ships with it. If you are buying specifically for Kobe, ask what certificate accompanies the order.
Why it's listed
An importer-direct Wagyu seller run by chef Erik Sun, cutting fresh to order and shipping across the lower 48, Hawaii and Canada. Its Japanese range is unusually deep and named by brand rather than by grade alone: Ohmi, Hokkaido Snow, Olive, Sendai Gyu, the rare Shichiri from Hida, Ozaki, Mizusako and Kobe from Morimoto Farm. Australian Wagyu and its own ranch beef round out the catalogue.
Registered, and currently carrying it
This seller holds registration No.752 on the Kobe association's USA listing and offers Kobe, which is both limbs of the test and the reason the badge is shown. The badge has moved before: it was withheld at an earlier check when the only Kobe listing was unavailable, and restored when the range came back.
That history is the useful thing to take from it. A registration is permission rather than inventory: a licence held until withdrawn, saying nothing about a given week, while availability can lapse and return without the licence moving at all. Treat the licence as permanent and the stock as a question for the day you order.
A Japanese range named by brand rather than by grade
Most sellers of Japanese Wagyu offer A5 and leave it there. This one names programmes: Ohmi from Shiga, Hokkaido Snow, Olive Wagyu, Sendai Gyu from Miyagi, Shichiri from Hida, Ozaki, Mizusako, and Kobe from a named farm. Several of those are small enough that they rarely reach the United States at all.
Naming the programme is a stronger disclosure than naming the grade, and it changes what you are choosing between. Ozaki beef comes from one producer whose animals are individually named and fed a proprietary ration; Olive Wagyu is finished on olive pomace in Kagawa and made in tiny quantities; Snow Beef is a Hokkaido programme. These eat differently. A grade cannot express that and a brand can.
The shop cuts fresh to order rather than selling from frozen stock, which is unusual at this end of the market and is the practical reason its range moves.
What to ask about the Kobe listing
Its Kobe product names the producing farm, which is more than most Kobe listings anywhere do. What it does not print is Hyogo or Tajima wording, or a statement of what paperwork travels with the order.
That is not a contradiction and it is a gap worth closing yourself. Kobe certification comes with documentation, and a buyer paying a Kobe premium is entitled to know what arrives in the box. Ask which certificate accompanies the order before buying for the name.
