Where a retailer names a brand such as Westholme, Mayura, Stone Axe or Margaret River, that name creates a useful follow-up path. A brand may represent a company program sourcing from multiple stations rather than one ranch, so check the program's own specification.
Two grading systems, neither of them Japanese
Australia uses separate marbling measures. The current AUS-MEAT reference scale uses whole-number scores 0 through 9 and assesses marbling amount against reference standards. MSA marbling uses 100 to 1190 and also considers distribution and fineness. There is no exact conversion, so one carcass can carry both values without contradiction.
The detail that prevents most product-page confusion: the current official AUS-MEAT reference scale ends at 9. Industry shorthand such as 9+ and brand scores above 9 may appear, but an MB11 or MB12 claim is not automatically an official AUS-MEAT score or Japan’s official BMS assessment. There is no Australian A5
A5 is issued under Japan’s system for carcasses graded in Japan. Australian grading systems do not issue that official grade. A product page selling “A5 Australian Wagyu” may be using A5 as an informal comparison; it should not be read as an Australian or Japanese official grade.
Ask for the Australian marbling scale and score, producer, and breed content rather than treating the Japanese letter-number combination as provenance.
What Australian Wagyu is good at
Australian Wagyu spans crossbred through fullblood programs, different feeding claims, and a broad range of marbling. That range prevents a single national texture, serving size, or position between American Wagyu and Japanese A5. Compare the specific producer, cut, breed content, and documented score.
Australia has a government-supervised halal export framework, so some halal Wagyu available in the United States is Australian. Country of origin is not certification: verify the named certifier, current certificate, product, and facility. Portion size and eating style depend on the particular cut and marbling rather than origin alone.
Reading a listing before you buy
Look for the marble score with its system named, the brand or station, and whether the beef is crossbred or fullblood. Those three together add useful context. A score quoted with no system cannot be compared reliably with a number from another scale.

- What does MB or MS mean on Australian Wagyu?
- It usually indicates a marble score, but the scale must be named. The current AUS-MEAT reference scale uses whole-number scores 0 through 9; MSA marbling is a separate measure. Some brands use 9+ as commercial shorthand or publish proprietary extensions, so MB or MS is incomplete without the scale.
- Is there such a thing as Australian A5 Wagyu?
- Not as an official grade. A5 is issued under Japan's system for carcasses graded in Japan. Australian systems do not issue it, so A5 on Australian Wagyu can only be an informal comparison and should not be represented as an official grade for that carcass.
- What is the difference between AUS-MEAT and MSA marbling?

- How does Australian Wagyu compare to Japanese A5?
