- Its Japanese A5 is listed by grade alone at ninety dollars a pound, with no prefecture, brand or farm named and no mention of a certificate travelling with the cut. It was also showing out of stock, so ask the counter what is in and where it came from before you plan a meal around it.
- Some Wagyu in the online shop is left over from a holiday pre-order run whose cut-off has passed, including the Westholme Australian steak. Seeing a listing is not the same as being able to buy it that week.
Why it's listed
Chop Shop Park City is a full service butcher, deli and cafe in the Newpark Town Center, open Wednesday to Saturday. Alongside dry aged New York and tomahawk steaks the case carries a real Wagyu range: Westholme Australian Wagyu graded 9+, a Masami Farm striploin at forty four dollars a pound, and a 35 day dry aged Akaushi from a local Utah herd at just under seventy. A Japanese A5 listing sits at ninety dollars a pound when it is in. Orders are placed on its Square shop and collected at the Park City counter.
The rare butcher that prints the marbling score
Chop Shop is a butcher counter in Park City with a live online catalogue, and it does something most shops of its size do not: it names the brand and the marbling score on the label. Its Australian Wagyu is sold as Westholme with an AUS-MEAT score attached, which is the complete answer to the question this directory exists to ask, and it carries a Masami Farm striploin priced by the pound alongside it.
A marbling score is the Australian equivalent of the Japanese grade, running on its own scale, and a producer name plus a score is exactly what separates a documented Australian steak from the word Wagyu on a ticket. Two origins are documented here rather than one.
It is a pickup counter, whatever the checkout implies
The online catalogue shows a shipping option next to store pickup on most items, and that is misleading. There is no published shipping policy anywhere on the site, every policy page is missing, the shop's own default fulfilment is pickup, and the Westholme steak is marked as store pickup only with no shipping choice at all. Both the shop's own description of itself and the local chamber listing describe door-to-door delivery in the area rather than shipping.
So this is a Park City counter with local delivery, and no nationwide claim is made for it here. A checkout that offers a shipping button without publishing where it ships is not a coverage statement, and reading one as national is the single most common way a directory misleads a reader about a butcher.
The Japanese line is real and not badged
The shop does stock a Japanese A5 cut, priced by the pound, and at the time of reading it was out of stock. The grade is stated and nothing else is: no prefecture, no brand, no certificate. That is why the Japanese sourcing is not badged here even though the Australian sourcing is.
It is worth knowing that stock at a counter this size moves in and out constantly, so an item absent today may be back next week. The absence is not a mark against the shop; the missing prefecture is simply a gap in what can be checked.
