Beef under one man's name

Ozaki Beef is the work of Miyazaki farmer Muneharu Ozaki, who markets cattle under his own name rather than the Miyazakigyu prefectural brand. Claims that he is the only Japanese producer to do so are promotional superlatives unless supported by a comprehensive registry. The beef is separately graded on Japan's carcass scale.

Ozaki studied large-scale cattle production in the United States, rejected what he saw as a factory model, and returned to Japan to build his own approach over more than three decades.

What sets it apart

Producer materials describe a hand-mixed proprietary feed of roughly fifteen ingredients and state that preservatives and antibiotics are not used in the raising program. These are producer claims whose scope should be checked against current farm documentation.

No. Ozaki simply markets his beef under his own name instead of the Miyazakigyu brand. The beef is still graded on the Japanese scale and is typically sold as A4 or A5.
