Eating Wagyu in Nevada
Thirty Nevada restaurants publish here and eighteen clear the full sourcing standard, which leaves only twelve resting on a menu claim. That ratio is the most striking thing about the state. Nearly three quarters of what Nevada advertises can be documented, and no other state with ten or more verified rooms manages better than forty-four percent. Las Vegas is a market where the beef is part of the pitch, and a kitchen selling the pitch tends to print the details.
It is also the most concentrated state on the list. Sixteen of the verified rooms are in Las Vegas, with one in Henderson and one at Stateline on the Nevada shore of Lake Tahoe, so the state page and the city page are very nearly the same page. What the Strip does differently is name things: eighteen rooms carry the Sourcing Transparent badge and seventeen cite a specific ranch or farm, both higher than any other state with ten or more verified rooms.
