Rainbow Lodge has occupied an 1890s Victorian house on Ella Boulevard for decades and cooks wild game and Gulf seafood: elk chop, nilgai antelope loin, Texas quail, smoked duck gumbo and red snapper. Its Wagyu is not a steak. The kitchen cures Wagyu brisket into its own pastrami and then serves it two ways, as a $21 toasted Wagyu reuben at lunch and as an $18 Wagyu pastrami hash with eggs at Sunday brunch. The menu does not say where that beef comes from, who raises it or how it grades. The dinner steaks are a different product, an 1855 Black Angus ribeye and a beef tenderloin, so a diner looking for a Wagyu cut will not find one here.
