7X Beef (7X Cattle Co.)

7X raises fullblood Wagyu on Colorado's Western Slope around Hotchkiss and Paonia, and describes its herd as a pure Japanese bloodline that has never been crossbred. That is the strongest breed claim an American producer can make and the least common: most beef sold as American Wagyu is an F1 cross, half Wagyu and half Angus, which is a legitimate product but a different one. The company says it DNA-tests its cattle and keeps pedigrees tracing back to Japan.

What is not established from its public materials is current registration with the American Wagyu Association, so this listing records the breed claim the ranch makes and stops there. Registration and breed claim are separate facts and only one of them is documented here.

7X publishes a page explaining why its beef is not Kobe, which is unusual enough to be worth reading. Kobe, it says, comes from the Tajima strain and must be born, fed and processed in Hyogo prefecture; only a few thousand pounds have entered the United States since imports were legalised in late 2012; and most Americans served Kobe have actually eaten so-called American Style Kobe, herds diluted with other breeds, mostly Angus.

Every part of that matches what this directory checks when a menu says Kobe, and it is the opposite of what a seller does when the word is worth money. A producer explaining that the most valuable term in the category does not apply to its own beef is telling you something about how it handles the terms that do.
