Authenticity flags
- The price list calls the premium line "Wagyu" without ever saying how much Wagyu is in the animal. The farm's own photo captions describe "one of many half Wagyu calves we have" and a single full Wagyu cow that "has not had any babies yet", which points to a half Wagyu cross rather than a fullblood animal. Worth asking at the counter, since the Wagyu filet is $60 a pound against $28 for the commercial one.

Hillside Beef is a working farm and storefront in rural southeast Washington County just outside Elkins, owned by Gayle Schleif and Jeff Muldrew, who moved from a side project into full time cattle production. Two lines share the counter: a Hereford and Angus cross sold as commercial beef, and a Wagyu line priced separately, with cattle born, raised and processed in northwest Arkansas, grass fed and grain finished. Cuts sell by the pound, halves and quarters can be reserved on a deposit, and the farm also trades at the Goshen Farmers Market in season. Look for the grain silo.
