Startz Cattle Co

Startz Cattle Co is a small family ranch at Floresville, south east of San Antonio, started in the mid 2010s by Aaron Startz, who serves as secretary and treasurer of the Texas Wagyu Association. It runs a fullblood Wagyu seedstock programme selling breeding bulls and replacement heifers, and markets its own beef, jerky and snacks directly at Texas farmers markets including the Pearl in San Antonio.

Officer standing in a state breed association is a modest but real credential. It puts a producer in the room where other Wagyu breeders assess each other, which is a harder audience than a farmers market and a smaller world than it looks.

Its genetics emphasise Tajima and Kamunami lines, backed by estimated breeding values and carcass data. That last phrase is where the substance is, and it deserves unpacking because it is the only forward-looking number in cattle breeding.

An estimated breeding value predicts what an animal will pass to its offspring for a given trait, calculated from the performance of its relatives and progeny rather than from how the animal itself looks. It is the difference between judging a bull by eye and judging him by what his calves actually did. Carcass data is the other half: the measured marbling, weight and yield of animals that have been harvested, fed back into the estimates.

For a buyer this matters even when buying beef. A ranch that selects on measured carcass outcomes is optimising for the thing you eat, whereas a ranch selecting on bloodline names alone is optimising for what sells a bull. Tajima and Kamunami are real and respected lines, but the numbers are the part that says the selection worked.
