St. Elmo Steak House, an Indianapolis institution 'Legendary Since 1902' and a 2012 James Beard America's Classics winner, builds its steak program on USDA Prime dry-aged, corn-fed Midwest Black Angus rather than Wagyu. Its only Wagyu item is a $7 appetizer, the 'Wagyu Slider,' made with a Joseph Decuis Wagyu patty and creamy Brie. Joseph Decuis is a respected Roanoke, Indiana Wagyu farm, but a single novelty slider does not make Wagyu a genuine focus, and no Wagyu steaks appear on the dinner menu. Its dry-aged Prime Angus, not Wagyu, is the headline.
