Its Japanese A5 Wagyu section names an A5 striploin from Miyazaki and Hyogo and an A5 Omi Hime delmonico from Ryuo, so diners can order verified A5 Japanese Wagyu by prefecture. The menu also features American Wagyu from Fred Linz Heritage and a signature Brush Creek Ranch Wagyu line, including a 36 oz tomahawk of proprietary black Wagyu from Saratoga, Wyoming.
