Chef Youji Iwakura's kaiseki and sushi counter, a restaurant in residence with an 8-seat counter inside Foundation Kitchen in Charlestown. Prix-fixe seatings only, booked through Tock. Kagoshima A5 wagyu appears as a named course on several different nightly menus: a chuck roll 'Hayashi Stew' simmer course and a Wagyu Shabu Shabu Soba course with Togakushi buckwheat noodles. Prefecture and JMGA grade are both bound to the beef itself on the venue's own menu, which clears the Japanese provenance standard. Wagyu is a course inside the set price, never a supplement.
