Bacchus is the flagship fine dining room of the Bartolotta group in downtown Milwaukee. Its current first-party menu lists a Wagyu Striploin entree with potato rosti, roasted chanterelle, and espresso steak sauce for 79 dollars, offered on both the a la carte and the chef's tasting menus. This is a legitimate whole muscle Wagyu course. The menu names no origin, grade, breed, or producer for the beef, so its provenance is not disclosed.
