Why it's listed
The fine dining room at The Farm at Brush Creek, a luxury ranch resort outside Saratoga in the North Platte River Valley, named for the 1880s Cheyenne Club but sitting hours west of Cheyenne itself. Dinner is a three course menu at 170 dollars built on beef from the ranch's own American Wagyu herd, raised and finished on the property. A dedicated Brush Creek Ranch Wagyu section lists dry aged ribeye, dry aged strip, tomahawk, bone-in filet and a reserve chef's cut, with Wagyu tartare, hot stone and bone broth alongside. Day guests are welcome on select evenings by reservation.
Authenticity flags
- The printed dinner menu calls the beef 100% full blooded Wagyu, while the ranch's own farm page says its American Wagyu is created by crossing purebred Wagyu cattle with continental cattle breeds.
