A young prefectural brand
Yamaguchi occupies the western tip of Honshu. Its prefecture-wide Wagyu brand is recent: Yamaguchi Wagyu Kirameki was created in December 2020 to consolidate the prefecture's beef under one recognizable name. The kanji chosen for it, read kirameki, carries a sense of radiance or sparkle.
The certification rule has three parts. The animal must be Japanese Black raised specifically for beef, the final fattening and at least half of the total raising period must take place in Yamaguchi, and the carcass must reach meat quality grade 4 or above on the Japan Meat Grading Association scale. Yamaguchi beef that does not clear grade 4 is still Yamaguchi beef, but it cannot be sold as Kirameki.
Kirameki and Takamori are not the same thing
Yamaguchi is also home to Takamori Drunken Wagyu, a single-farm brand from Iwakuni whose cattle are fed sake lees. Takamori is far better known in the United States than Kirameki is, which makes it easy to assume that any Yamaguchi Wagyu on a U.S. menu is Takamori. It is not. Takamori is one specific producer with one specific feeding program; Kirameki is the prefecture's general certification standard, spanning many farms with no sake-lees requirement.
So a bare Yamaguchi label tells you the prefecture and, if the Kirameki name is attached, a grade floor of 4. It does not tell you the beef is Takamori. Our Takamori page covers that brand on its own terms.
How to order it with confidence
Ask whether the Yamaguchi beef on offer is certified Kirameki and what grade it carries. Because the standard is prefectural rather than proprietary, those two facts, origin and grade, are what the label is actually promising.

- No. Takamori is a single farm in Iwakuni that feeds its cattle sake lees. Kirameki is the prefecture-wide standard covering many Yamaguchi farms and involves no sake lees. Takamori cattle come from Yamaguchi, but most Yamaguchi Wagyu is not Takamori.
