Chef Brian Lewis's Japanese room in the restored Vigilant Hose Company firehouse on Wilton Road in Westport, serving a seasonal nigiri and hand-roll menu plus a 15-course OKO-KASE counter tasting at $200 per guest. A5 Miyazaki Beef appears three ways on OKO's own Westport documents: as nigiri with truffle aioli and crispy leeks, as a Boujee Temaki hand roll, and as the beef course closing the OKO-KASE nigiri progression. A separate Spicy Wagyu Beef crispy with truffle and quail egg is also offered. The Westport menu prints no prices; OKO-KASE requires 48 hours' notice.

Authenticity flags

The Spicy Wagyu Beef crispy does not say where its beef comes from, unlike the A5 Miyazaki dishes elsewhere on the same menu. If you want the Miyazaki beef specifically, order it by name.
