Ryan Ratino's 50-seat Georgetown steakhouse, tucked into a cobblestone alley off Grace Street and open since May 2026 under Hive Hospitality. Its beef section is headed 'With a Tail to Tell' and sells whole cuts by the pound, each listed under the name of its source: Galiciana at $79, Bear Creek Farm at $74, Beeman Ranch Akaushi at $88 and Hanwoo Beef at $115 per pound, or $195 for a ten-ounce steak. The a la carte steak list adds a nine-ounce Wagyu flank steak at $44. The restaurant is licensed by the Kobe Beef Association under registration No. 2256.
Authenticity flags
- This restaurant is licensed by the Kobe Beef Association, but no Kobe dish appears on any menu it publishes. If Kobe specifically is what you are coming for, call ahead rather than assuming it is available.
- The Wagyu flank steak is listed with no description at all, so its country of origin, its grade and its producer are not stated anywhere on the menu.
- The by-the-pound beef is named by producer, which is more than most steakhouses disclose, but the Beeman Ranch Akaushi line does not say whether the cattle are fullblood or a cross, and the ranch publishes no website of its own to check against. Ask your server if the distinction matters to you.
