Karubi tells you how the meat will arrive and roughly where it came from, but unlike most cut names it does not tell you which single muscle you are getting.
A menu term, not one fabrication
カルビ is a yakiniku term, borrowed from the Korean galbi, and it covers short-rib and belly cuts sliced thin for grilling at the table. That makes it a category rather than a specification: one kitchen's karubi and the next one's can be different muscles, cut to different thicknesses, from a broadly similar region of the animal.
One common variant is worth knowing by name. 中落ちカルビ, naka-ochi karubi, is the intercostal meat taken from between the rib bones. It is a different eating experience from a boneless belly slice, and a menu that distinguishes the two is telling you something real.
Where it sits
The region karubi is drawn from sits low and forward on the animal, around the short plate and the rib bones, which is well away from the loin cuts that dominate a steakhouse menu. It is a harder-working, fattier part of the carcass, and that is exactly why it suits the format: thin slices over high heat render quickly and the fat is the point.
Because it is a region rather than a fixed cut, the diagram on this page highlights the area rather than promising a single muscle. That is the honest version, and a seller naming the specific cut is doing better than one naming only the category.
Ordering and cooking it
Karubi is usually served raw for you to grill yourself, so the cooking is yours to get right. Thin slices cook very quickly, and it is worth being explicit that elapsed time and surface colour are not food-safety tests. USDA guidance for whole beef steaks is 145F with a three-minute rest.
Keep the utensils that touched raw meat away from cooked food, which matters more at a grill-your-own table than at any other Wagyu format. Beyond safety, the practical advice is to resist crowding the grill: a Wagyu belly slice renders a lot of fat, and a crowded surface steams rather than sears.
Karubi is also the cut where the format does more of the work than the grade does. A thin slice over fire for well under a minute is a different proposition from a steak, and a very high marbling score is not automatically the better choice for it, because the fat renders out rather than staying in the bite. If a menu offers the same cut at two grades, the cheaper one is a real option here in a way it is not for a ribeye.
