Ichi Shabu is a shabu shabu specialist at Campus Pointe in northeast Fresno, part of Lin's Restaurant Group. Its Imperial Cuts tier is a three-origin Wagyu lineup: Japanese A5 Wagyu Ribeye at 55, Australian MS9 Wagyu Ribeye at 30, and Mishima Reserve American Wagyu Short Rib at 28, each sold as a shabu protein by the plate. The Imperial Wagyu Set at 68 puts all three in one order. Wagyu beef also turns up in a harumaki spring roll, a meatball and the nikku omurice. Doors are open Sunday to Thursday to 9pm and Friday and Saturday to 10pm.

Authenticity flags

  • The Japanese ribeye is sold on its A5 grade alone and the Australian ribeye on its MS9 score, with no prefecture, brand or farm named for either. Only the American short rib names its producer, Mishima Reserve, whose own material describes crossing full-blood Wagyu bulls with American cows without saying what generation the beef is. Ask who imports the Japanese cut if that matters to you.
