The wood-fired Carne section is split into American Wagyu, Australian Wagyu and Japanese Wagyu headings, and every steak is attributed to a named farm. Australian cuts carry explicit AUS-MEAT marble scores: a 14 oz Carrera Farms New York strip at MS 8-9 and a 48 oz Jack's Creek bone-in ribeye at MS 6-7. American Wagyu comes from Chatel Farms of Vidalia, Georgia. A 4 oz Japanese A5 and a Wagyu carpaccio round out the program.
