One hundred and twenty Florida restaurants publish here and thirty-eight clear the full sourcing standard, with eighty-two more resting on a menu claim. Florida's distinction among the big states is conversion: eleven of the twelve verified rooms holding a Kobe registry licence were actually serving Kobe when we last looked, which is ninety-two percent against Texas at eighty-one and California at seventy. A Florida licence is close to a promise; elsewhere it is permission to buy.
The state spreads more evenly than its reputation suggests. Miami holds only five of the verified rooms, and seven Florida cities clear the two-verified threshold, among them Orlando, Naples, Jacksonville, Miami Beach, West Palm Beach and Boca Raton. Jacksonville is the unusual one: all three of its published Wagyu venues are verified, and no other Florida city big enough to carry a hub is clean like that.
The beef itself leans imported. Thirty-five of the verified rooms document Japanese origin and twelve document American, which is the thinnest American showing of the big three as a share: about a third of Florida's verified rooms against forty-five percent in California and sixty-two in Texas. The dozen that do name an American source name it properly, Snake River Farms four times over, and Abatti Ranch, Chatel Farms, Sakura Wagyu Farms and 9 Line Farms once each.
Two of the state's strongest listings are not restaurants in the ordinary sense but butcher counters that also serve, which is why the by-the-ounce format leads here as it does in Texas. Four verified Florida rooms hold a MICHELIN distinction, among them a star and a Bib Gourmand.
