This listing's current published materials advertise Wagyu, but the offering does not meet our full verification standard for provenance. It carries no authenticity badge; undisclosed details remain explicitly unverified.

Why it's listed

The sit-down restaurant inside Ameristar Casino Hotel on the Iowa bank of the Missouri in Council Bluffs, serving breakfast daily from 7am and dinner Thursday through Saturday from 5pm, with reservations bookable online. Its dinner menu carries two Wagyu items: a bone-in American Wagyu short rib entree at $39 with goat cheese polenta, springtime pesto and short rib demi, and an 8oz Imperial Wagyu filet at $53 in the steaks and chops list beside Prime ribeye and Prime New York strip. Neither line prints a breed generation, a grade or a farm.

Authenticity flags

  • Both Wagyu dishes are sold as American Wagyu, and neither prints a breed generation, so how much Wagyu is in the animal is not stated. The filet names Imperial Wagyu, an Omaha beef brand, and Imperial's own material describes its cattle only as a cross of Japanese Wagyu with American breeds without giving a generation either. Its Market, Classic, Signature and Reserve labels describe marbling, not lineage.
  • The dinner card is seasonal and the kitchen also runs a separate rotating spotlight menu, so the Wagyu short rib in particular may change with the season. The spotlight menu running in July carried no Wagyu at all.

Common questions

Does 1853 Bistro & Bar serve real Wagyu?
Its own current menu advertises Wagyu, and that claim was read directly on August 18, 2026. What the menu does not do is say which Wagyu: no prefecture, grade, breed status or producer is published, so the sourcing cannot be checked from outside. That is a gap in what is written down rather than a suggestion that anything is wrong with the beef, and plenty of kitchens buy carefully without printing the details.
What kind of Wagyu does 1853 Bistro & Bar serve?
Its menu discloses American and Imperial Wagyu. Each of those is taken from the venue's own current materials rather than from a review or a listing site, and the evidence behind it is quoted further down this page.
Why is 1853 Bistro & Bar listed without a Wagyu badge?
Because a badge here means the sourcing was checked, not that the food is good. This listing is published because the venue genuinely advertises Wagyu on its own current material, and it carries no badge because that material does not say which Wagyu. If the venue publishes the prefecture, grade, breed status or producer, the listing can move.
