Atlas Restaurant Group's French brasserie and dinner-theatre room in Baltimore's Harbor East, at 1010 Fleet Street. Its one Wagyu dish is the French Dip a la Monarque at $36, made with Australian Wagyu culotte, caramelized onion, comte and truffle fries. The rest of the beef list is dry-aged in house and led by a market-price cote de boeuf; the burger is built on Roseda Farms beef. Private dining adds a ten-ounce Wagyu flat iron and a Wagyu coulotte carving station. The restaurant is licensed by the Kobe Beef Association under registration No. 1366.
