Wagyu appears in three places, all of them the same 8oz flat iron: an Australian Wagyu Flat Iron at 45 with cacio e pepe fries, compound butter and lemon thyme aioli; the same cut at 36 as an add to any pasta; and a brunch Steak and Eggs at 32 with lemon herb fries, chimichurri and a fried egg. Only the dinner listing names the origin. No producer or marbling score is published anywhere.

Authenticity flags

  • The dinner card says the flat iron is Australian Wagyu, which is a real origin statement, but it names no farm, no brand and no marbling score. Australian Wagyu is graded on a marbling scale that runs from about 4 to 9+, and without that number there is no way to tell a modest cross from a heavily marbled one.
