A large award-winning restaurant and bar in the Northern Pacific freight building at 611 East Main Street, open 4pm daily. Two Wagyu offerings, each credited to a named Bozeman-area supplier. The nightly steak list tops out with a 16 oz Marbled Meats dry-aged MT Wagyu ribeye at 85 dollars, above the USDA Prime ribeye and strip. The entire signature burger program runs on a proprietary blend of pasture-raised Wagyu and Angus chuck from Montana Wagyu Cattle Co. of Belgrade, a partnership the restaurant has held since 2013. No breed generation or marbling grade is published.
Authenticity flags
- The signature burgers are a blend of 50 percent Angus and 50 percent Wagyu rather than a pure Wagyu patty, which the restaurant states plainly on its own sourcing page. That is honest labelling, but it means roughly half the beef in the burger is Angus.
- That same page calls the blend American Kobe, and the ranch behind it uses the phrase American-style Kobe too. Kobe is a protected Japanese designation carried only by cattle registered in Hyogo Prefecture, so this is Montana-raised Wagyu cross and not Kobe in any certified sense. No breed generation and no marbling grade is published for it.
- The 85 dollar dry-aged Wagyu ribeye sits on the nightly steak list rather than the standing menu, so call ahead if you are coming for it. It credits a Bozeman butcher for the dry-aging but names no ranch or breed detail for the beef itself.
