Hyun is a 40-seat Koreatown counter where Japanese A5 Wagyu is not a supplement but the entire concept. The three-course Hyun-makase, $159 per person, opens with 12-plus daily cuts selected and butchered in-house by the chef, ribeye, striploin, culotte, short rib, grilled tableside, then moves to marinated Wagyu and an encore of guests' favourite cuts. Chef Jae Kim imports whole boneless cattle from Japan and breaks them down himself, an operation now extended into THE HYUN, a satellite premium Wagyu butcher shop in Gramercy Park stocking over 50 A5 cuts.
