Chef Kenny Sloane's seafood room at 3150 William Styron Square, open Tuesday to Saturday. Four of the five steaks on its Entrees Meats list are Wagyu: an A5 Japanese Wagyu 8 oz tenderloin at $160, a 16 oz ribeye and a 12 oz New York strip both credited to Snake River Farms at $100 and $80, and an 8 oz bistro steak at $50. A Wagyu New York Steak is a fixed course on the $85 five course and the seven course tasting menus. No prefecture, brand or breed generation is published anywhere on the site.

Authenticity flags

  • The $160 tenderloin is sold as A5 Japanese Wagyu, which tells you the country and the Japanese grade but not where in Japan the beef came from. No prefecture, brand or farm is named for it anywhere on the site, so there is no published way to trace which Japanese herd it comes from. Ask before ordering if the source matters to you.
  • The $100 ribeye and the $80 New York strip both credit Snake River Farms of Idaho by name, which is more than most kitchens disclose. That beef is American Wagyu, meaning Japanese cattle crossed with domestic breeds and raised in the United States rather than Japanese beef, and neither the menu nor the producer states how much Wagyu genetics the cattle carry.
  • The $50 Wagyu Bistro Steak and the Wagyu New York Steak course on both tasting menus name no country, grade or producer at all, so there is nothing to tell you whether they are the same beef as the two steaks that do name a source.
