Eating Wagyu in Virginia

Thirty-eight Virginia restaurants publish here and five clear the full sourcing standard, which leaves thirty-three resting on a menu claim. Nineteen Virginia cities hold a published listing and not one of them has two verified rooms, so Virginia has no city page at all and this is the only location page the state gets. Only New Jersey is spread thinner.

Four of the five verified rooms are in the Washington suburbs, at Chantilly, Fairfax, Tysons and Alexandria. The fifth is River Stone Chophouse down in Suffolk, on the other side of the state in Hampton Roads. Richmond publishes five rooms and has documented none of them; Virginia Beach and Arlington publish three each and are in the same position, which is where the next Virginia city page will most likely come from.

For so small a documented pillar, Virginia is unusually solid on Kobe. Two of its five verified rooms hold a licence on the official Kobe register, and both of those rooms also had Kobe on the menu when we last looked, so both carry the Certified Kobe badge and both reach the top tier. Bourbon Boulevard in Chantilly and Gyu Shige in Fairfax are the two. A licence on its own is only permission to buy, so a state where every licence is also a badge is telling you something real.

What Virginia does not do is name a producer. Not one of the five carries the Sourcing Transparent badge and not one cites a ranch or a farm in our records, which it shares with Georgia and Hawaii among states of this size. Three published Virginia Wagyu farms sit in this directory and no Virginia kitchen names any of them. River Stone Chophouse is the exception on origin rather than supply: it is the one verified Virginia room documenting American rather than Japanese beef, and the only one to state a breed status.
