Authenticity flags
- Its American Wagyu is sold under short producer codes such as AA, WS, DW or OK rather than the farm's full name, and the site no longer carries the page that explained what those codes stand for. If you want to know which farm raised a particular cut, ask at the counter before you buy.
- Its own story page talks about ethical ranching and the care that goes into raising the beef, which can read as though the business runs its own herd. It does not. It is a butcher and retailer that buys from partner farms and imports Japanese Wagyu, then cuts and packs on site.
- The online store is set up for shipping only, with no in store pickup offered at checkout, yet the site publishes no shipping policy and never says which states it will ship to. Check with the shop before ordering from outside the Wichita area.
Why it's listed
A specialty butcher founded in 2023 by Clay and Barb Hoberecht, with two shops in Wichita and an online store. The range runs from everyday Kansas beef, burger patties, jerky, pork and chicken through to imported Japanese A5 listed by prefecture and brand: A5 Hokkaido and A5 Nagasaki ribeye, A5 Kagoshima sirloin, A5 Takamori filet and a Miyazaki ribeye. Domestic cuts carry a short code for the partner farm that raised them, and meat is cut and packed on site. Both shops open seven days a week, 10am to 7pm.
A butcher counter that cuts its own
Wichita Wagyu is a working butcher shop rather than a warehouse with a website. It buys from Kansas farms, breaks and cuts in house, and sells over the counter at two Wichita locations with ordinary shop hours. That is a different proposition from most Wagyu sellers online, and it is why a Wichita steakhouse names this shop on its own menu rather than naming a ranch.
Its case runs in two directions at once. There is imported Japanese Wagyu, listed by prefecture or brand alongside the grade, and there is domestic American Wagyu from partner farms in Kansas. Buying the first here means you can ask about it face to face, which is more than most listings offer.
What it does not tell you, and what to ask
The domestic cuts are labelled with short farm codes rather than farm names, and the page that used to explain those codes is gone from the site. So a domestic steak here comes from a named Kansas operation that the label does not name. If the ranch matters to you, the counter can tell you and the label cannot.
Shipping is the other blank. The shop is set up to ship and says nothing anywhere about how far, and there is no stated pickup option at checkout either. Ask before assuming it will reach you, and do not read the absence as nationwide coverage.
