A French inspired chophouse in The Admiral Hotel on Government Street, where Wagyu appears twice on the Cuts list rather than as a single novelty. A four ounce minimum portion of A5 Wagyu is seared tableside on a hot stone at $25, and an eight ounce American Wagyu filet from Mishima Reserve is $75. Neither line goes further than that: the A5 names no prefecture, brand or farm, and the Mishima filet names its producer without stating a breed generation. The rest of the beef is USDA Prime, including a 75 day dry aged Delmonico and a tableside carved tomahawk.
