Masaharu Morimoto's dining room at the Andaz Maui in Wailea, with a dedicated Wagyu Steaks section on its dinner menu. Japanese A5 sold by the ounce at $48 with a three-ounce minimum is imported from Miyazaki Prefecture and served with onion and garlic jus. Beside it sit two Australian cuts, a 16oz Wagyu ribeye at $125 and an 8oz centre-cut Wagyu filet at BMS +5 for $98. Wagyu also runs through a beef carpaccio and a wagyu tsukune in the kushiyaki set.
