The dinner menu runs three Australian Wagyu New York strips side by side: an unbranded Australian Wagyu at BMS 4, a Westholme Wagyu at BMS 9+, and a Margaret River Wagyu described as Pure Bred at BMS 9+. Two of the three name a real Australian producer alongside a marbling score, which clears the Australian provenance standard. The program is entirely Australian; no Japanese A5 and no Kobe claim appears anywhere on the menu.
